This month we are all about mushrooms!

Mushrooms are a healthy addition to any diet. Although mushrooms are often categorized as vegetables they are actually a fungus. They do have many health benefits similar to vegetables being low calorie, high in fiber, and full of vitamins, minerals, and antioxidants.

Unlike most vegetables, mushrooms are a good source of protein.

The protein content of mushrooms (2.2 g per cup, raw) makes then a great addition to plant based diets. It also may help keep you more full between meals.

Mushrooms contain prebiotic fiber.

Prebiotics change the microbiome by promoting the growth of probiotic bacteria. This keeps your gut healthy!

Mushrooms are a good source of antioxidants, vitamins, and minerals.

Mushrooms are one of the few foods that contain Vitamin D. They are also a good source of B vitamins, potassium, and copper. Although they are bland in color, they contain a significant amount of antioxidants that may prevent disease and have immune boosting benefits.
